Nutella Double Choc Cookies






2006 Curtin 大学收留了我的,我独自来到柏斯。当我已是中年学生了,离开我上一次念大学也有十年的事。。。所以有点害怕,有点彷徨。孤的坐在大大的讲厅里好无聊。小小的我最喜欢躲在角落,最好老看不到我,不要发问问题,因在听不懂,也很不真的上是留意到坐在身后一位和我一样孤独的女孩。两个孤独的眼神相碰,吱吱跟我交朋友的信号。。。自我介后,知道她叫Wing从此两人逐Wing是个很醒目很明的女孩,当我就像寄生虫一黏得她死死的,她什么科,我就什么科,反正只要功可以一起做我就很安心了。这样黏啊黏的,两年半的大学生活我都是出双入,一起上,一起吃午直晚也很常相,一起K,一起旅行。当然除了校园的活动是我们两个,户外活动一定不会少了Wing的姐姐SinKaan。两个护士加一个医生,大家是圈中人,我们的话题可多得很。

为了梦想,她们两姐妹几年前离开柏斯,现在定居于Darwin。虽然遥远,但是风筝没断了线。。依然密却问候,依然对对方的生活关心。因为是同行,所以大家都能了解行内的苦,自然Wing就是我诉苦的最好对象了。

五月的某天,Wing给我来电话问想不想一起去悉尼,顺便去一趟Tasmania。好久都没见了就这样决定在悉尼见吧! 明天一早我就要去悉尼和她们两姐妹约会了。好期待这次三个好友再次一起旅行的日子。

今天选来了我很喜欢的食谱作者。更欣赏她的照相天份。Katie暗色背景食物拍得分外吸引,擅长rustic 的风格。喜欢食物摄影的朋友不要错过她精彩的网页:




INGREDIENTS
250g butter, cubed at room temp.
1 cup caster sugar
½ cup brown sugar
100g chocolate, melted and slightly cooled
2 eggs
3 tablespoons Nutella
3 cups plain flour, sifted
1 cup roasted pistachio, roughly chopped or halved
230g chocolate chips ( I used Reese’s peanut choc chips + dark choc chips)

METHOD
1. Preheat oven to 180˚C (350˚F)

2. Line 2 large baking trays with non-stick parchment or with silicone mats
      In the bowl of a food processor/stand mixer or using a hand-held mixer,beat together softened butter, caster sugar and brown sugar for 8-10 minutes until super creamy, smooth and fluffy.

3. Add the cooled, melted chocolate and beat again lightly to combine.
Crack in the 2 eggs, add the Nutella and combine.
Add the flour, nuts and chocolate chips and stir to incorporate everything together thoroughly.

4. Using a teaspoon ( I used tablespoon for larger cookies) distribute the mixture evenly over the two trays and bake for 15-20 minutes or until the cookies are crisp and golden.

Note :
To achieve a more styled look half way through baking remove the trays and add a few extra halved hazelnuts and chocolate chips to the tops of the cookies then return to the oven
